?CHOC CHIP WALNUT COOKIES – SIMPLE YET MAGICAL. These cookies are deliciously packed with crunchy nutty walnuts and chunks of dark chocolate!! I found myself eating the raw dough before baking as they are THAT GOOD! ??? — ✖️CHOC CHIP WALNUT COOKIES (Makes 16) ?Ingredients 3/4 cup Buckwheat flour 1/2 cup Drinking Chocolate @nibandnoble (or subbed with 1/3 cup coconut sugar + 1/4 cup cocoa powder) 1/2 tsp baking soda 1/2 tsp baking powder @organictimes 1/4 sea salt 1/4 cup chopped walnuts, plus more for topping @thesourcebulkfoods 1/3 cup dark chocolate, chopped into small pieces 3 tbsp neutral flavour oil (I used macadamia oil @_brookfarm_ ) 4 tbsp warm almond milk @sogoodau — . ?Instructions: 1. Place the buckwheat flour, baking powder, baking soda, and salt in a large bowl and whisk to combine. Fold in the chocolate to the flour mixture and stir well. 2. Place Drinking Chocolate/substitutes, oil and warm milk in a seperate bowl and whisk until well combined. Add to the flour mixture and mix until no flour is visible then fold in walnut pieces. The mixture should be sticky and not dry. Cover the bowl with plastic wrap and refrigerate the dough for 2 hours. 3. Preheat the oven to 180C. Remove dough from the refrigerator and take roughly 2 tbs at a time, roll into a ball, place onto a lined baking tray. Use your hand and flatten slightly. Repeat with the rest of the dough. 4. Top with more walnut pieces on top and bake for 10 to 12 minutes. Hola ?? Looking for a simple lunch idea? Try this MEXICAN CAULIFLOWER SKILLET ? Full of flavour, spices and right amount of heat ? Topped with a squeeze of fresh lemon ? and avocado ? and serve it with some roasted sweet potatoes ? (I’m having my homegrown ones which are so creamy!!) To bring this meal to the next level + gut-loving probiotic I paired this with the new pineapple Kombucha “TEPACHE” @remedydrinks (100% no added sugar) which make it a perfectly balanced meal ☺️ . ✖️MEXICAN CAULIFLOWER SKILLET ? 1 clove garlic, minced 1/2 medium onion 2 tsp oil for cooking 1/4 head cauliflower (3 cups florets) 1 medium tomato, diced 1/4 red capsicum, chopped 1/4 cup shelled edamame 1/2 cup mixed mushrooms of choice (I used shiitake and pearl) — ?Seasoning: 1/2 tsp cumin seeds @gewurzhaus 1/2 tsp chilli powder (I used Chilli Chipotle @gewurzhaus ) 1 tsp garlic powder 1/2 tsp smoked paprika 2 tsp soy sauce (I used BBQ cocoamino @niulife ) — ?Heat oil a fry pan on medium heat then add in garlic and onion and cook until slightly brown. Add in the mushrooms and cauliflower and cook until 80% done, followed by tomato, capsicum, edamame and mushrooms. Healthy meal ready 15mins? Preparation is the key! This CHEEZY PROTEIN RICE BOWL was prepared in no time! What I love to do is bulk cooking like I did here: I made a batch of cheezy protein tofu patties (seriously obsessed with them ? you have to make them asap! Recipe a couple posts back or via @vivonue ‘s website?) and pop them in the freezer so I can add them to my nourish bowls or salad for a quick source of plant protein ? RAW CARAMEL NOUGAT SLICES ???? ➡️raw, protein packed, healthy, and oh so tasty ? ? ? Recipe: CHEWY BASE •12 medjool dates •2 tsp @loving_earth mesquite (optional) •6 T coconut flour •4 T PB •1 T rice malt syrup ? NOUGAT •1/2 can of coconut cream •2 T @loving_earth cacao •2 T rice malt •1 T coconut flour •2 T @macr0mike salted vanilla protein •pinch of xanthan gum ? CARAMEL •2 cups of walnuts •2 cups of cashews •2 cups of coconut sugar •7 T coconut yogurt/ cream •salt and vanilla ? CHOCOLATE •buckinis •1 cup @loving_earth cacao •1/2 cup rice malt •1/2 cup coconut oil •T of @macr0mike powdered cheesecake PB (plus more for optional swirl on top) ? DIRECTIONS Blend each layer and press into a lined pan. Freeze each layer for a bit before making next. Before pouring on the chocolate, sprinkle some buckinis on top of the caramel for some extra crunch. Then melt chocolate ingredients over stove and pour on top. While chocolate is still sticky, swirl in PB.

SUNDAY SUNDAES (#sundaysundaes – is that a thing?) ft COCOWHIP and BEING FINALLY ABLE ALLOWED TO DO MORE THAN JUST POST STORIES ?❤️? . Though I will admit that I did enjoy posting more stories about the happenings in my life and whatnot. Even though it may not have been that interesting to you all… (eg playing board games with my family – but you know what? I FIND THAT INTERESTING SO THERE! ?) . I have had a pretty killer weekend filled with loads of fun, yummy food, friends and family. It’s been pretty wild, and I have been so appreciative of the fact that I can still enjoy fun moments with myself and the people I love regardless of how I physically feel. . I don’t need to assume a victim mentality and cut myself off from the world. Sure, I can take the rest I need to and assert my boundaries. But that’s not always, and I need to remind myself of that daily ❤️ . Because there are times when the payoff of laughing with another is greater than an evening at home by yourself. Or maybe it’s spontaneously sharing a meal with your family that’s a greater payoff. Or playing something ridiculous and fun. . Not always. But definitely sometimes. . So I’m very thankful that I am in better communications with my body, and also with the people around me. I’m still figuring it out, but it is a blessed journey ❤️ . How’s your communication with yourself? Is it something you’ve been working on for a while, or are you just starting to learn? I would love to know how you’ve been growing that skill ?

You can’t be happy ALL THE TIME. . Believe it or not… I genuinely thought that you could. And I was striving for that. . I remember seeing all of these amazing, beautifully curated and colourful Instagram profiles where bloggers would talk about how THEY WERE SERIOUSLY HAPPY AND EXCITED ABOUT LIFE ALL THE TIME. That because of the way they ate and how connected they were to their lifestyle, they never had “down” days. . I was so curious and envious. All diseases they had were (allegedly) healed. All mental health challenges they had were (allegedly) gone. They (allegedly) had healthier relationships than ever before. . It was SO MOREISH. I wanted exactly what they said that they had. But I could never reach it. Though now I’m not certain whether they even reached it either. . I am thankful for the change in tide when it comes to what we post on here. I am thankful for the raw, vulnerable and “less beautiful” (but still beautiful ?) insights into people’s lives. . I am thankful for the journeys you allow me to see. The ones that aren’t finished yet. The ones that have just started. And the ones that seem to be taking way too long. . I am thankful for this culture we are slowly shifting away from the superficial, and into the depths of our souls. . We don’t need to be happy all the time to be worthy of life, worthy of finding joy, and worthy of making the best of what we have inside and around us. . Thank you for being a part of this journey with me, and for sharing with me as I do with you ? I try to never take it for granted, because it’s incredibly, incredibly special.

Life is a pizza – you can't always pick the base (well… unless you have coeliac disease… in which case I SINCERELY hope that you do ?), so make sure you top it with the things that you love/enjoy/delight in/crave, and make sure that it will keep you full and satisfied… right up until you reach that final slice ? . Life's too short to not make the most out of it. Or to pick toppings out of fear. Or to let judgment stop you from trying something new. . And also, life's too short to not enjoy the pizza that you are creating ? . Pizza deets: gf base topped with tomato/basil paste, df cheese, cherry tomatoes, onion, crispy eggplant and fresh basil ? . I like my pizzas real' simple ? . … Mostly because I never write down my recipes anymore, so keeping it minimal not only means I focus on a few choice flavours, but it also means I'll more likely remember it ? . Yesterday my boyfriend and I saw the @gamechangersmovie and I have to say it was absolutely incredible! ?? It was so amazing to hear so many stories of athletes embracing a plant-based diet and seeing incredible results in their performance! However my favorite part of the film was a story about a football player who is vegan and how is wife, @chefcharitymorgan makes the most amazing plant based meals for him and his team mates. Y’all! When I saw this woman makes me want to step up my cooking game! ? Her food looks incredible and she and so many others are proving being vegan doesn’t mean giving up the foods you love in fact it’s putting more love and thoughtfulness in your food to fuel your body with the best fuel possible to be your best ?? @chefcharitymorgan you are my inspiration! Which one was harder for you to stop eating when you went vegan? Eggs or Cheese? ???‍♀️?For me it was eggs. Eggs in my house growing up was a staple so I absolutely loved them. For a while it was hard to figure out how to make a tofu scramble worthy of what I remembered pre-vegan days. Although I can make a mean tofu scramble now, @justforall eggs brings back all those nostalgic memories for me of my mom making scrambled eggs in the morning on a Saturday. Honestly Just For All eggs is so good you would never know these weren’t chicken’s eggs. Another company proving there’s a more compassionate alternative to the things we love! I made this recipe with @gardein beefless ground, chopped kale, green onion, and as always drizzled some Siracha sauce on top. @happeavegans sure knows how to make eye catching food that tastes just as good as it looks! ?⁣ ⁣ If you go back to just a couple of months ago on my Instagram feed, you’ll see all I ever posted were restaurant meals. Then you’ll notice a shift to mostly healthier, home cooked meals as I started cooking more and eating out MUCH less?‍? ⁣ ⁣ That being said, I still love a good (always vegan) meal out, like this one that @eatmoreplantsofficial and I enjoyed at the @centraltexaspigrescue party yesterday!
